You should used regular honey. However since the conclusion was don't do it, the point is moot. Still comparing pineapple @ 2.00 and a jar of that honey @ 35.00, seems silly.

Without having watched, I reckon this one might actually work quite well. Honey is pretty decent at preserving things because it kills mold and bacteria and all of the sugar in it might help draw out the water from the steak. Then again, how it's gonna affect taste is of course a different story.

The thing with the bone is likely just a result of the meat not getting properly covered. You probably would have gotten better results if you went for a cheaper kind of honey (Manuka is really meant as a medical supplement and is insanely expensive) and bought enough to not only cover but straight-up *submerge* the meat in like a whole pot of honey.

For me it's yogurt. I often use goat-yogurt, onions, salt and pepper and it's just the best marinade ie for shashlik cubes. Pineapple has 2 disadvantages: It leaves a too fruity taste on the meat and you can't grill very close to the fire since the sugar coat on the meat will get black.

It is physically impossible to dry age anything in a water based solution. Honey is sticky, but still wet. Learn actual terms like curing before making up stupid contradictory ones like "dry brining".

Honey soy and garlic actually makes a good steak marinade. Don't use it on very thick steaks that you have to sear a long time because it will burn.

@???? I do. An enzyme is nothing more than a specific molecule that serves a specific purpose in living organisms. And if we happen to eat those organisms, be it a plant, mushroom or meat, we'll also eat the enzymes that come with it. That's typically not an issue though as our body is pretty good at dismantling unwanted enzymes. Actual fact: Whenever you eat, you are bound to consume a bunch of enzymes because they are also contained in our saliva and help to pre-digest the food. Enzymes play a pretty massive role in our digestion in general. For instance, quite a few people are incapable of producing an enzyme called lactase which is used to break up a sugar called lactose which is found in milk. Because they lack the enzyme, eating dairy can make those people sick. So... I don't know what kind of books you have read, but they are either horrendously outdated or entirely unscientific. There's no such thing as just one singular enzyme, it's a massive group of substances and molekules that are near omnipresent in every living organism.
